Spelt Currant Pecan Bread
Insructions:
Mix all dry ingredients together with the exception of currants. Mix all of the wet ingredients together so that the rice syrup is completely dissolved.
Make a well in the dry ingredients then add the wet to it. blend until a soft dough is formed then turn onto a floured surface. Knead for 5-10 minutes then form into loaf or loafs. Bake for 35 minutes in a preheated oven of 375°F or until bottoms are golden and knocking produces a hollow sound.
Spelt Pecan Currant Bread
4 cups organic spelt flour
3 Tbsp ground cinnamon
1 pkg active dry yeast
1 tsp salt
1 cup chopped pecans
4 Tbsp coconut oil
1 cup hot water
3/4 cup vanilla rice milk
1/2 cup brown rice syrup
1 1/2 cup black currants
A delicious festive bread with organic pecans, black currants and a hint of cinnamon. . . gluten free, dairy free, sugar free!! A delightful loaf that is perfect for a bit of toast, a holiday tea, or a morning treat. Use to make a most decadent french toast to wow your brunch goers!!
