Salmon Quinoa Burgers
This recipe is full of power house ingredients known as superfoods. Protein packed quinoa, Omega-3 filled Salmon, Vitamin K, A & C laden Kale. A great recipe to make ahead and use for lunches, quick snacks, or easy dinners!!
For a Vegan version substitute mashed beans or mashed tofu in place of the Salmon.
Insructions:
Prepare Quinoa. Prepare Caramelized onions. Mix all ingredients together in large bowl. With wet hands form patties (half cup of mixture each or to prefered size).
Place patties on parchment lined baking sheets and let sit in fridge for 20-30 minutes.
Bake at 400°F for 25 minutes then flip patties over and bake for another 20-30 minutes or until they turn golden and slightly crispy on edges.
Salmon Quinoa Burgers
2 cups cooked Quinoa or Millet (I like to roast the grain first, then cook with onions, garlic and other savory herbs)
1 cup caramelized onions and kale (sautee one large onion and 2 cups chopped kale w/ sesame oil in a skillet)
2 cans wild salmon packed in water
1/2 cup Fresh Basil or 2 tsp dried basil
4 T. Tamari or Soy Sauce
4 T. Prepared Mustard
2/3 cup ground Flax Seeds
3 T. Ground flax seeds soaked in 6 T. warm water (egg replacer)
6 Green Onions chopped
3 carrots grated
salt to taste
