JE Lamble Concepts Hot n' Sour Soup
This classic soup is brought to life in all it's simplicity! Both Hot and Sour flavours are delicately expressed in this tantilizing soup! Delivering rich warm flavors with the satisfying knowlege that it is both vegan friendly, body friendly and heart & soul friendly!
STEP #1
Cut Burdock into matchstick sized pieces and saute on med/low until edges begin to turn golden. Begin to turn up the heat to medium and add small amounts of water at a time until the burdock is tender and cooked through. Add sliced mushrooms and sliced onions and continue to saute with water until onions become translucent. Add ground white pepper.
STEP #2
Once the burdock, mushrooms and onions are cooked add water and simmer for about 20 minutes. Add Ume Plum Vingar and let simmer another 10 minutes, add Bok Choy and simmer until cooked about 5 minutes and Enjoy!

2 Tbsp sesame oil or olive oil
1-6" burdock root
1 Onion
1 cup Shitake Mushrooms, stems removed
1 tsp ground white pepper or to taste
4 cups water
1/4 cup Ume Plu Vinegar
2 cups rough chopped bok choy
