Dark Chocolate Black Bean Oatmeal Brownie Cookies
Not too sweet yet delightfully rich. These cookies are amazing! Dark rich chocolate flavor, the perfect acompaniement for a cup of coffee-like beverage or tea! And the secret ingredient - black beans. Who would have thought that a bean would play such an important role in our desserts! In many cultures beans are incorporated into their desserts. The Japanese have "bean" using beans in their sweets for a long time. Such desserts include red bean icecream, sweet red bean paste, red bean cakes. In Thailand they make a black bean pudding. So broaden your horizons as we narrow our intention to live a healthy and great life! Vegan, processed sugar free, dairy free, gluten free!
Dark Chocolate Black Bean Oatmeal Brownie Cookies
1 1/2 cup canned black beans, drained and patted dry
2 tsp vanilla extract
1/2 cup tahini
1/4 cup brown rice syrup (for sweeter version use half brown rice syrup half maple syrup)
1 tsp baking powder
3 28g squares dark unsweetened baker's chocolate, melted
1 cup oats (or substitute walnuts or pecans if desired)
Pre-heat oven to 350 degrees Ferenheit. Blend all ingredients in the food processor until dough is formed. Using wet hands roll into tablespoon sized balls and place 2 inches apart on baking sheet. Take a wet fork, keep dipping in water to avoid sticking, press balls into cookie shape creating a crosshatch. Bake for 10-15 minutes. Let cool, enjoy!
