Coconut Almond Chocolate Bar Bites
4 cups shredded unsweetened coconut
1 cup whole almonds, toasted
1/2 cup brown rice syrup (for sweeter version use half brown rice syrup half maple syrup)
1/2 cup coconut oil
4 Tbsp Vanilla Bean Paste
4 28g squares dark unsweetened baker's chocolate, melted
1/4 cup brown rice syrup
Toast almond in skillet then chop in food processor until medium chop is acheived. Add Coconut, brown rice syrup, coconut oil and vanilla bean paste. Blend until a thick dough or paste is formed. Spread into a parchment lined pan and let chill in the freezer for 30 minutes or until solidified. Cut into desired shapes. Melt the chocolate in a double boiler with coconut oil. Once melted add brown rice syrup. Stir until dissolved. dip coconut squares into chocolate and set on parchment lined baking sheet. Let chill in fridge or freezer. Store in dry sealed container in fridge or freezer.
Makes approximately 50 1" bites! Enjoy!
